Excuse the old picture...it's been a busy week. Baking as a day job and for the farmers' market makes for a lot of time in the kitchen. Somehow, I did summon the energy tonight to begin Summer Jammin' 2010.Thanks to the previous warm few weeks, strawberries are turning red and lusty, ripe for the picking. And pick I did the other day...
I like to keep the jam simple: berries, sugar, lemon juice, and vanilla bean. I cook them down, down, down until the mixture is thick and a beautiful deep garnet color. I don't set it with pectin at all–it remains loose and maybe a little runny, but so flavorful and not too sweet.
I love this time of year when fruit is just showing its promise. Pears swell on their slender stalks, black currants flow from the branches, and blueberries cheerfully swell in clusters.
