A New Leaf
This little beauty is a carrot cake cupcake. And while it has a cap of cream cheese frosting, this could be my baking mascot for 2011. I'm working on revising some of my tried-and-trues with whole grains, less sugar, and flavorful oils. I'm using Kim Boyce's book, Good to the Grain, as my inspiration and starting point. Over the past couple of years, I've researched alternative sweeteners and ancient grains, yet still haven't put my knowledge to use in my own baking. Now I have an arsenal of flours at my disposal, all recently organized into Mason jars labeled with the contents. Just looking at them makes me feel healthier...and incorporating them into my recipes makes me optimistic about eating and baking well in 2011.
